Protein-Packed Cottage Cheese Banana Pancakes

Ingredients

  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1 Tbsp sweetener of choice (honey, maple syrup, sugar, zero calorie substitutes)
  • 1 cup small curd cottage cheese
  • 3 eggs
  • 1 ripe banana mashed
  • 1 tsp vanilla extract
  • cooking spray or butter

Instructions

  1. Add flour, baking powder, and sweetener to a medium bowl and stir to combine.

  2. Add cottage cheese, eggs, mashed banana, and vanilla extract to the bowl and stir.

  3. Heat a skillet on medium-low and lightly coat with cooking spray or butter.

  4. Add about 2 Tbsp of batter to the pan for each pancake.

  5. Cook about 2 minutes for each side or until pancakes are set and golden brown.
